I know that the meal I had yesterday probably isn't the problem BUT! I have been pretty much sick since after I ate it. OK So maybe I did have a giant taco dinner and a plethora of cheese (Did I mention I'm Lactose Intolerant?) for the past two days...So maybe that's the reason I haven't been feeling good. But I'm just going to go ahead and blame those plantains. But lets move on. That disaster is in the past now.
Lunch came a little bit later today. The Boyfriend made me a late breakfast so I didn't get hungry till about 5 today (that and someone found the first to episodes of Glee for me...I am not addicted to Glee now. I swear). But all that is OK, today was totally worth it. Ever since Jenny and Steph bought me these meals, I have had an eye on this one. So needless to say, I have been really really excited. Like really excited. Like it took so much for me to not eat it yesterday, but I figured I would get the worst out of the way first. Ladies and Gentleman may I present:
Oh yes. OH YES! Now lets me explain this. I love Mexican food. My love for Mexican food burns inside me with a fiery, fiery passion. I was born in Texas, of course I love Mexican food. OK maybe I am really in love with Tex-Mex...cause some Mexican food makes me nervous. But enchiladas are like my 4th favorite thing in Mexican food land (for those curious the list goes 1) tacos, 2) re-fried beans with melted cheese, 3) those little queso poofs, 4) enchiladas, and 5) GUAC!) So when Steph put this one in the basket, I picked it up and started to drool
And look guys! Its Organic, not vegan in the least, but Organic! I love microwaveable meals that are organic, its so ironic. Also NO GMOS! (wtf are GMOS?! I dunno, but this doesn't have them!!!) Also its Gluten Free, so those that are allergic to Gluten, you too can enjoy the magic that is enchiladas. I am disappointed that their "Cheese" label isn't a little more dramatic. Michelina likes to make sure everyone knows that their food has REAL CHEESE! None of that fake government stuff. Just look at how delicious those little guys look. Just oozing out filling and neatly covered in sauce. Oh god, I couldn't take it anymore.
It seems like the better for you something is, the longer it needs to microwave. This one takes 6 minutes and 45 seconds all together. The tray is also covered in a PLASTIC BAG! Not just film on top. I had to read over the directions a few more times to make sure this was right. I don't want to melt something delicious to my microwave. I'm not eating it off the little tray in there. That is just sad. Not to mention that our microwave has already been through one explosive incident (yea, The Boyfriend cause a mini explosion in the microwave last week. Yea, we have black marks in there now.) Moving on! THE FOOD!
Can nothing EVER look delicious when its microwaved?! OK seeing the enchiladas in this state gave me flash backs to my child hood. I can't remember the name exactly, but I think its Del Rio Enchiladas? If you have ever had those, you know what Im talking about. They are gross, but I'm sure we'll touch on these later in the future.
These smelled. So. Good. The Boyfriend walked by me in the kitchen and sniffed above them and gave me the look of "I can haz?" No. No you cannot haz. I have to eat these. They are for the blog!!!
So I did. And it was glorious. It was like the heavens had opened up and delivered onto me organic enchilada goodness. Angel's sang, trumpets played and The Boyfriend hovered over me till I gave him a bite. So good.
The sauce itself seemed to have cheese infused with it. The enchilada oozed when you cut into them but in a good way. This was one of those things that I was happy to have drowning in sauce. Michelina could learn a lesson or two from Amy. She knows what she's doing. The rest of it was fantastic. I was pretty much scrapping against the side of the little paper tray it came in. When it was done, I was not only full but totally satisfied. So lets all say it together: OMGSOGOOD!
So all in all Amy's Organic Cheese Enchiladas (NO GMO's!) were pretty much the best thing I have eaten so far in this blog's history (because this blog is so old.) If you ever happen upon it, take my word, it is completely worth it. Tomorrow we'll move away for a moment and back into the world of processed meats and REAL cheeses. Jenny and Steph did buy me normal microwave meals, not just organic/vegan/nogmos.
